How to remove Google Assistant from the home screen button on Android
Google Assistant was launched in 2016, initially exclusive to Google Pixel devices. However, in late 2017, the AI-powered virtual assistant made its way to all Android devices running on Android 5.0 Lollipop and newer versions. While this assistant is powerful, it may not appeal to everyone, as it occupies the main button on the phone, which can be frustrating if it accidentally pops up. Disable Google Assistant from the Home Button

Stock Android Phones
Open device settings and go to Application Manager, click on default applications and search for Google Assistant and Voice Input. Click on the Assist app option. On the next screen, you’ll see a list of options like None, Google Assistant, or Take a screenshot. Choose None or Take a screenshot if that suits you better than the default setting.
MIUI Devices
Open settings, go to Additional settings, and then click on Button and gesture shortcuts. Click on Turn on Google Assistant. In the next screen, select None to remove it from the home screen. Alternatively, you can assign the button to a gesture or another button like the back button or menu button for more efficiency and speed.

OnePlus Devices
As usual, go to settings, then to apps, and press on Default followed by Assist & voice input. Click on Assist app and choose None from the pop-up window or any other available options that may be more useful for you.
Samsung Devices
Open settings, go to Apps, click on the three dots icon in the upper corner and select Default apps from the menu. Then press on Device assistant and Device assistance app again on the next screen, choose None to disable it.

Completely Disable Google Assistant
If you want to completely disable Google Assistant on your phone, you can do so. While you can’t remove the assistant from your phone, you can certainly turn it off. Open the Google app on your device, click on the More tab at the bottom corner, then click on Settings and Settings again under Google Assistant settings. Scroll down, click on Device icon, and turn off the assistant. Once you do that, Google Assistant will not appear with the Home button or even voice commands.
Disable Assistant When Headphones Are Connected
For many users, Google Assistant keeps appearing when headphones are connected, disrupting your work. To stop this behavior, try this method: open Google app, go to More, then Settings, then Settings again, scroll down, click on Phone icon, then click on Other hands-free settings, and disable wired headphones and Bluetooth devices.
